Just a few minutes' walk from Kyoto Station, Shinpukusaikan Main Store opens its doors at 09:00 as a chuka soba specialty shop founded in 1938. The bowl brought to your table features a soup so dark it can truly be called pitch-black, yet it has earned a reputation for being surprisingly light and clean on the palate while bursting with the depth and savory richness of soy sauce. The clear broth base of chicken bones and pork bones clings well to the medium-thick to medium-thin straight noodles from Kondo Seimensho, while the aroma of Kujo green scallions ties the entire bowl together. The jet-black fried rice, stir-fried with the very same soy sauce blend, is another specialty favored by many who order it as a set with their ramen, praised for being fragrant and savory without the saltiness its appearance suggests. Generous slices of tender pork belly chashu and table-side spicy miso for changing up the flavor add to the enjoyment. The old-school dining room lined with red tables buzzes with lively energy, and sharing tables during crowded hours is the norm. It is a destination well worth visiting with the expectation of waiting in line.
