The signature feature of HIIKI is its soup, crafted through the labor-intensive process of simmering pork bones and chicken separately before blending them. It retains the rich depth characteristic of Iekei ramen while having little gaminess, resulting in a mild and remarkably drinkable broth. The most popular dish, the special ramen, features two types of smoked pork chashu—belly and loin—along with a runny soft-boiled seasoned egg and aromatic nori seaweed, with careful attention paid to every single topping. The noodles are medium-thick noodles from Sakai Seimen, renowned as an Iekei staple, designed to pair firmly with the broth. Chashu is also available for takeout, and side dishes like the chashu bowl and bibimbap bowl are popular as well. Although compact with just 8 counter seats, the interior has a clean, Japanese-style aesthetic that is welcoming even for solo female diners.
