The signature dish at Chinese Soba WA-UZU TOKYO is the special shoyu soba, featuring a rich broth crafted by blending multiple varieties of soy sauce with chicken and pork dashi (Japanese soup stock). The thin, straight homemade noodles catch the broth beautifully, achieving a level of perfection that leads many diners to finish every last drop. The special bowl is generously topped with two types of chashu—low-temperature cooked pork loin and hanging roast pork—along with chewy wontons made with Mochihime wheat flour wrappers, showing deep care in every single topping. The limited-edition "Sanmi-Ittai" (Trinity) bowl, which combines three daily-changing ingredients such as shellfish, fish, and shrimp, allows guests to discover different layers of umami on each visit, accented by the fragrance of yuzu. In the summer, the shijimi clam and kelp water tsukemen, featuring high-hydration noodles immersed in viscous kelp water that can be enjoyed with various condiments (yakumi) to alter the flavor, is also popular. Adding a ¥100 mini rice bowl keeps the meal very affordable. With 19 seats including counter seats and an entirely non-smoking floor, it is an easy and welcoming spot for solo lunch diners.
