Taiyaki Hiiragi is a taiyaki specialty shop dedicated to one-by-one grilling, taking over 30 minutes per fish, and its greatest feature is the thin, crispy skin that results. Inside, homemade chunky red bean paste made from Hokkaido azuki beans is packed in from head to tail, with a modest sweetness that is said to make it possible to eat any number of pieces. There are also seasonal variations such as chilled taiyaki in summer and taiyaki soft-serve, and the dish pairing a piping-hot taiyaki with cold soft-serve ice cream is well received for the enjoyable contrast of hot and cold. The shop hangs its noren curtain along a quiet side street a short way from Ebisu Station, and its appearance, unchanged since opening in 2006, is memorable. It is a takeout-only shop with a bench out front, making it handy both as a snack during a stroll and as an individually wrapped souvenir that's easy to carry home. Lines can form depending on the time of day, but the efficiency of handing over freshly grilled taiyaki right after ordering is also reassuring.
