An essential element when describing Ramen Koike is its thinly sliced rare chashu prepared using low-temperature cooking. Reminiscent of prosciutto or roast beef with its moist texture, it is highly praised as a signature topping whose umami oozes out the more you chew. The broths center on two styles: a clear golden delicate niboshi (dried sardine) soup, and a viscous, rich broth combining tori paitan (chicken white soup) with niboshi. The delicate version is accented with chopped onions and has minimal bitterness, earning a reputation for being easy to eat even for those not fond of dried sardines, while the rich version is appreciated for its elegant rather than heavy finish. Side dishes such as aburasoba-style seasoned kaedama (extra noodles) and junk-food-style mayo chashu rice are also popular. As the starting shop of the Koike Group, which now operates multiple sister locations, its 11-counter-seat interior is entirely non-smoking.
