The signature dish at Sohonke Sarashina Horii Main Store is its translucent white sarashina soba, made using only the central part of the buckwheat groat. It has a smooth texture and a faint sweetness, and connoisseurs are said to enjoy tracing the change in flavor by trying it first plain, then with salt, and finally with dipping sauce.
