Tamaruya is a venerable establishment founded in 1582, situated before the gates of Mizusawa Kannon near Ikaho Onsen, whose standalone building conveys its claim as the birthplace of Mizusawa udon. The signature mori udon features glossy, translucent noodles with a firm chew and smooth throat feel, classically enjoyed by tasting the contrast between soy sauce and sesame dipping broths in a single serving. The crispy, light, and fragrant black maitake mushroom tempura and the sweet, generously sized extra-large tamagoyaki are also dishes meant to be shared; set meals combining udon with tempura and small side dish (kobachi) make a reassuring option for first-time visitors. The tatami seating (zashiki) and wide halls where shoes are removed exude the dignified ambiance of a historic ryokan, with staff in traditional Japanese attire welcoming guests.
