The signature dish of Tai Shiratsuyu Ramen ○de▽ is "Tai Shiratsuyu Torori," made by slowly simmering natural red sea bream and shellfish dashi over many hours. The thick, creamy soup is accented by the aroma of onion and yuzu peel, complemented by playful ○- and ▽-shaped bamboo shoots shaped after the restaurant's name. Whipped with an espuma technique, this bowl is visually striking and picture-worthy. Guests also love complementing their meal with side dishes, such as meat sushi crafted from thick slices of rare chashu, and sea bream rice (tai meshi) that can be finished like ochazuke by pouring the remaining soup over it. Seasonal limited-edition offerings, such as chilled noodles with fresh Japanese sansho pepper in summer, ensure there is always something new to look forward to with each visit.
