Hakata Ramen Barikote is a shop that has been crafting Hakata tonkotsu ramen along Okubo-dori in Higashi-Koenji since opening in 2000. Its signature Hakata ramen features a 100% tonkotsu broth that is remarkably clear and low in odor, paired with ultra-thin straight noodles whose firmness can be customized across levels from soft (yawa) to ultra-firm (barikata) and raw-firm (nama). Because the noodle portion is modest, ordering Kaedama (extra noodles) is standard, and seasoning with red pickled ginger, ground sesame seeds, and spicy pickled mustard greens (karashi takana) lets you change the bowl's profile multiple times. The chashu-men, lined with thinly sliced pork belly along the rim of the bowl, and the Hakata pan-fried gyoza, seared crisp with bite-sized thin skins, are also well-regarded. Encircling the kitchen, the interior with only 7 counter seats buzzes with the lively energy of a street stall, and the quick pace of serving just minutes after ordering is reassuring. The entire shop is non-smoking and stays open continuously throughout the day, making it welcoming for a solo lunch or as a finish after drinking.
