Suishaki Soba is a historic soba shop in Kamatahoncho, within walking distance of Tendo Station, operating since 1861. Its signature dish is the original Torichuka, combining Chinese noodles with a Japanese-style soba soup stock. Topped generously with chicken, tenkasu tempura bits, nori seaweed, and mitsuba, it is renowned for its mildly sweet, light broth accented by the sharp kick of black pepper. The shop continues to mill its own flour by stone-grinding whole buckwheat groats, making firm, rustic inaka-style ita soba and zaru soba very popular as well. Many guests also order the rich, flavorful fried squid tentacles (ika geso-age), which pairs perfectly with beer. Built in the style of a traditional folk house, the interior features soba noodle-making demonstrations and buckwheat history displays so waiting guests stay entertained. With 300 seats spanning tatami seating (zashiki) and large rooms from the 1st to 3rd floors, it welcomes families, friends, and travelers stopping by for sightseeing or business trips. Takeout soba and Torichuka sets are also available.
