Tokyo Dosanjin is a hideaway soba restaurant located down a flight of stairs in the semi-basement of a building along the Meguro River. Directly sourcing unhulled buckwheat from farmers, the kitchen stone-grinds only what is needed for the day, crafting handmade soba in 3 varieties: finely ground, coarsely ground inaka, and thick-cut. The signature dish is the chilled sudachi soba, where thin slices of sudachi citrus blanket the entire surface of the bowl, winning wide acclaim for the refreshing way the citrus acidity blends with the umami of the bonito dashi (Japanese soup stock). The menu also offers à la carte dishes such as seasonal vegetables and shrimp fried in a light tempura batter, as well as dashimaki tamago (rolled omelet) available in either Kansai or Kanto style, perfect for pairing with carefully selected sake.
