Ajisai New Chitose Airport, located on the 3rd floor of New Chitose Airport in the Hokkaido Ramen Dojo where popular shops gather, is known as a long-established Hakodate shio ramen restaurant. The signature shio ramen has broth so clear you can see the bottom of the bowl, packed with umami from kombu kelp and animal stock, known for a deep flavor contrary to its light appearance. Firmly cooked thin curly noodles clinging to the broth and wheat gluten puffs absorbing the soup also leave an impression. You can also enjoy distinctly Hokkaido choices such as the Toku-Shio ramen with extra seasoned egg and chashu pork, or a mild bowl enriched by large scallops and the sweetness of buttered corn. Food arrives quickly after ordering, and the 40 seats—mainly counter seating—make it easy to drop in alone. The shop is fully non-smoking, barrier-free, and offers a children's menu, making it easy to stop by at the start or end of your journey.
