Founded in 1958, Akayu Ramen Ryu Shanghai Yonezawa is a standalone ramen shop renowned nationwide as the birthplace of Akayu spicy miso ramen. Its signature bowl features a white miso broth built on chicken bones, pork bones, and seafood umami like dried sardines (niboshi). The classic way to enjoy it is to first taste the rich broth as is, and then gradually dissolve the dollop of spicy miso placed in the center of the bowl, changing the flavor profile to one with gentle heat and the aroma of garlic. Made at their noodle workshop across the street, the hand-massaged thick wavy noodles are chewy and catch the rich broth well. The extra chashu pork ramen and the soy sauce Akayu ramen, which omits the spicy miso to highlight the dried sardine aroma, are also popular. The interior retains a retro vibe with a red motif, offering counter seats along with regular tables and round tables, making it great for visits with family or friends. Because orders are taken while waiting in line, food is served smoothly once you are seated.
