Conveniently situated right in front of the East Exit of the Nippori-Toneri Liner's Nishi-Nippori Station, Edmond Nishi-Nippori is a Jiro-style ramen shop famous for its thick, chewy homemade noodles. The emulsified, rich pork dashi soup is praised for being deeply flavorful yet surprisingly clean and drinkable to the last drop, coating the noodles impeccably. The thick, large slices of stewed pork are melt-in-the-mouth tender, well-infused with savory sauce, and thoroughly satisfying. Many guests also love drizzling the sweet back fat served on a separate plate over the noodles, or changing up the flavor profile with raw egg or a half seasoned soft-boiled egg, with some visiting specifically for these additions. The shop has a total of 13 seats—10 counter seats and 1 table—and is completely non-smoking, creating a welcoming atmosphere even for solo diners. No reservations are accepted and payment is cash only; as the shop closes once ingredients run out, it is best to visit early.
