Its signature dish is the Kiwami Tongue (thick-cut), using the tongue root of which only a small amount can be taken from a single cow, renowned for its melt-in-the-mouth tenderness and juiciness. Also popular are the zabuton sukiyaki, coated in egg yolk and sweet-savory sauce and eaten with a bite of rice, and the beef fillet cutlet sandwich paired with truffle sauce, followed by the Ushigoro curry infused with savory meat umami to close the meal. Meat is essentially prepared in a full-attend style where staff grill each slice individually, allowing guests to relax and focus on conversation without worrying about the heat.
