Located just a short walk from Daimon Station on the Toei Oedo Line, Sumibiyaki Noko Chuka Soba Okurindo lets you choose your broth from 8 different ingredients, including mackerel, squid, Pacific saury, chestnuts, and mushrooms. Using a proprietary method where the whole ingredients are charcoal-grilled into a paste and blended into an ago dashi (flying fish soup stock), the signature mackerel bowl delivers an aromatic toastiness and straightforward, robust fish flavor. Toppings like chashu pork and scallions are served on a separate dish, adding an entertaining element of allowing you to alter the flavor whenever you like. Ordering the set meal (teishoku) with white rice, nori tsukudani (simmered seaweed), and miso-pickled cucumbers offers the option of dropping rice into the remaining soup to finish. With 15 counter seats in a calm wood-accented interior reminiscent of a kappo, fast service makes it easy for solo diners to drop by after work. The shop is non-smoking throughout and operates continuously from lunch through dinner.
