Located in a standalone house nestled in the mountains along National Route 307 in Joyo City, Kyoto Prefecture, Ore no Ramen Appareya stands in an area surrounded by forest yet draws bustling crowds, with lines forming well before opening and cars bearing distant license plates. The signature dish is the super tsukemen, limited to 20 servings a day, celebrated for the pairing of its creamy, cloudy tonkotsu and seafood salt dipping broth with house-made thick flat noodles full of wheat aroma and firm bite. Other favorites include the dakutoro salt ramen topped with espuma froth and the kokumaro salt ramen with a lighter finish. Every detail is meticulously prepared, from low-temperature rare chashu seasoned with black pepper to thick bamboo shoots accented with ginger. Guests can also enjoy watching the kitchen in action from the counter-only seating. The harmonious service of the husband-and-wife owners and thoughtful gestures, such as serving soup-wari near the end of the meal, are widely praised. The shop features a 30-car parking lot, is entirely non-smoking, and is accessible for wheelchair users.
