Regarded as a pioneer of the rich style combining animal-based broth from pork bones and chicken carcasses with dashi from mackerel flakes, its whole-wheat extra-thick curly noodles offer a chewy, resilient texture that thoroughly coats itself in the thick dipping broth. A house specialty is fresh shichimi chili added midway through the meal, widely praised for its refreshing heat and aroma of nori seaweed that neatly balances the rich finish.
