Standing in the mountains of Katsuura City, Chiba Prefecture, just off the highway, Ezawa is a standalone restaurant that attracts ramen lovers from across Japan as the birthplace of Katsuura-style tantanmen. Its signature tantanmen features a soy-sauce broth based on bright red chili oil, layered with the sweetness of slow-sautéed onions and the savory depth of minced pork; it is renowned for an exquisite depth of flavor that is not as overwhelmingly spicy as its appearance suggests. Thin, straight noodles lift the broth effortlessly, with finely shredded scallions adding an aromatic accent. Spiciness can be selected from 5 levels, and the menu offers a rich variety of choices, including the upper-grade tantanmen with plenty of minced meat, a bowl layered with thick chashu pork, and winter-only motsu tantanmen. Upon arrival, guests write their names in a register and receive a phone call when their turn approaches; the staff's efficient handling of the 20-car parking lot is also highly praised.
