Hashitate has been serving Kyoto cuisine since 2008 in Eat Paradise in front of the JR Kyoto Station West Gate ticket barriers, distinguished by its mastery of dashi (Japanese soup stock) passed down from a venerable ryotei. Its thick, fatty mackerel sushi can be ordered either seared (aburi) or cured (shime), and its sea bream chazuke—pairing sea bream sashimi with a rich sesame miso sauce, finished midway by pouring over dashi—is also a favorite. In summer, cold dashi-infused pike conger somen noodles (nyumen) and pike conger tempura rice bowls make an appearance, and a drizzle of the original tabletop sansho pepper flavored oil or whole sansho pepper paste brings out aroma and transforms the flavor. To finish, enjoy the bouncy Seiko or renkon-mochi sweets made from lotus root starch and wasanbon sugar. Featuring 48 mostly table seats, the restaurant is entirely non-smoking and barrier-free for stroller access, earning praise for its attentive service that suggests seasonings to complement each dish. It is ideal for a meal while waiting for the Shinkansen, marking the end of a trip, or taking out items like mackerel sushi for souvenirs.
