Dashi (Japanese soup stock) carefully extracted from chicken, kelp, dried baby sardines, scallops, and other ingredients takes center stage. The restaurant's two signature bowls are the Hinodeya Ramen, featuring a clear soup fragrant with scallop and bonito, and the Hamaguri Clam Ramen, packed with the concentrated umami of whole shell-on clams. The low-hydration, straight thin noodles made with whole wheat flour are crafted in-house, and guests can even enjoy watching the noodle-making process through the glass. Unique toppings like crunchy lotus root and soft-boiled seasoned eggs shine, and pouring the leftover soup over scallop rice at the end is a classic way to finish the meal.
