Nestled in an alley a few minutes' walk from Ebisu Station, Sushiebisu Ebisu Honten is an izakaya serving creative sushi made with red vinegar and black vinegar shari alongside seafood appetizers. Its signature dish is "Ebi-Kani Gassen," in which shrimp, crab, salmon roe, and quail egg are mixed inside a crab shell and poured over yuzu-scented thin rolls, drawing cheers for its luxurious appearance and rich flavor. Photogenic dishes continue, such as a mille-feuille layering horsemeat yukhoe with sea urchin and salmon roe, a glass filled with a salmon roe cocktail, and melt-in-your-mouth slow-cooked "drinkable salmon." Playful plates like soup dumplings eaten with shrimp vinegar and deep-fried natto rolls are also well received, and the chopstick fortune slips given to guests upon arrival have become a popular topic. The modern Japanese interior with wood grain and concrete tones features 47 seats, with counter seats making it convenient for solo drinking, and the entire venue is non-smoking with Wi-Fi and power outlets available. Accommodating banquets with all-you-can-drink courses and private hire, it is widely appreciated for affordability unexpected in Ebisu.
