Located slightly away from Nishi-Omiya Station in a standalone building in Nishi Ward, Saitama City, Fujidana Udon is a popular Musashino udon restaurant open only for weekday lunches. The signature nikujiru udon features a rich soy sauce dashi (Japanese soup stock) so packed with pork belly, green onions, and fried tofu that the toppings almost completely cover the broth, releasing delicious flavor with every bite of the thick, chewy noodles. Freshly fried kakiage and vegetable tempura are crispy, and diners appreciate the reasonable prices given the generous portions. A line often forms before opening to write names on the waiting sheet, but with plenty of staff efficiently divided between the kitchen, dining room, and parking guidance, wait times are unexpectedly short.
