Shiopanya Pan Maison Ginza is a takeout-only bakery opened in Ginza in 2021 as a sister shop carrying on the legacy of the bakery in Yawatahama, Ehime Prefecture, known as the birthplace of shiopan. Its signature shiopan is baked crisp and fragrant on the outside, chewy on the inside, and crunchy on the bottom, releasing rich melted butter alongside the gentle savoriness of rock salt with every bite. The shop also offers delightful variations on the shiopan dough, including truffle shiopan with an aromatic truffle finish, moist salt melon pan, savory options like spicy pollack roe or ham and cheese, and red bean butter sandwiches. With prices so reasonable you would not expect them in a prime Ginza location, buying several pieces is easy, making them a popular choice for gifts or family breakfast. While queues form even before opening, the shop uses an online ticketing system so you can stroll around the neighborhood while waiting for your notification.
