Kairyu Hakata Main Store is a ramen shop serving authentic Kurume-style heavy tonkotsu ramen from a standalone building in Higashinaka. The soup is crafted exclusively from pork heads and back fat, simmered continuously for 24 hours using the "yobimodoshi" method of continuously replenishing the broth. The result is an ultra-rich, thick broth with a slightly gritty texture, so flavorful that its aroma wafts well outside the restaurant. The shop's signature style is "zundare" noodles—intentionally boiled thoroughly until soft—and the master's passionate explanation of why he recommends this, even before guests sit down, has become a well-known hallmark of the shop. The fully loaded bowl, topped with chashu pork, seasoned soft-boiled egg, and homemade wontons, is acclaimed for its satisfying portion, with the chewy wontons infused with ginger adding an unusual twist.
