Established in Kameari in 1976, Ginpachi Tei Yazawa is a standalone soba restaurant where the owner personally hand-mills buckwheat flour using stone millstones and makes soba from scratch. The signature dish is the inaka seiro, featuring coarse-ground buckwheat that retains visible flecks (hoshi); limited to just 20 servings a day, it frequently sells out early. The thin-cut nihachi soba (80% buckwheat, 20% wheat) offers a pleasant chew and smooth finish, pairing exceptionally well with the dry (spicy) Edo-mae broth aged for ten days. Other enticing items ideal for a pre-soba drink with a selection of premium sake include sobagaki with a rich, chewy buckwheat aroma, tenseiro featuring large kuruma prawns, and dashi-infused tamagoyaki. The meal concludes with a thick, white, velvety sobayu resembling a creamy potage. The welcoming warmth of the zelkova wood interior, along with the chance to converse with the owner while watching the stone milling in the waiting room, adds to the singular charm of this restaurant.
