The signature dish of Yaizu-ko Minami is the special wild southern bluefin tuna bowl, which brings together cuts like otoro, chutoro, akami, seared marinated tuna, and scraped tuna meat (sukimi) in one bowl; its greatest appeal is the ability to compare the sweet fat and the savory lean meat all at once. The comparison bowl that lets you taste Pacific bluefin and southern bluefin side by side is limited in quantity, so an early visit is recommended. You can choose between dry (spicy) and sweet soy sauce for sashimi according to your preference, and the shop accommodates fine adjustments such as extra sushi rice (shari) or extra sushi toppings (neta).
