Founded in 1977, Nakamura is a self-service udon shop in Hanzan-cho, Marugame City, renowned as a pioneer of Sanuki udon touring. Its signature fully self-service style turns the meal into an experience: you take a portion of udon noodles, warm them in hot water yourself, and adjust the amount of dashi (Japanese soup stock) and condiments (yakumi) to your preference. The signature kake udon pairs clear dashi rich with the aroma of dried sardines with slender yet bouncy noodles, acclaimed as delicious whether served cold or hot. Diners also enjoy comparing different varieties, including kamatama, where noodles are transferred directly from the boiling kettle into a bowl with raw egg; bukkake, enjoyed refreshingly with grated daikon radish; and shoyu udon, which highlights the flavor of wheat. Dipping freshly fried sea bream surimi chikuwa tempura into the dashi is another favorite way to eat. Although lines form before opening, the turnover is fast, and parking for 30 cars is available.
