Within walking distance of both Nippori Station and Nishi-Nippori Station, Teuchi Udon Akau is a handmade udon shop that ages its dough for over half a day rather than focusing on freshly cut noodles, bringing out a firm chew and the natural sweetness of wheat. The broth combines dark soy sauce with a luxurious dashi base of mackerel flakes, Soda bonito flakes, hon-katsuobushi, and grilled flying fish, creating a crisp, bold flavor that many diners enjoy drinking to the last drop. The signature makanai bukkake features an array of toppings including grated daikon radish, onsen tamago, tempura bits, and fried mochi, with the fun option to crack tabletop quail eggs using special scissors for a change of flavor.
