Toyoharu's signature bowl is topped with paika—pork cartilage stewed until melt-in-your-mouth tender. The gelatinous, melting texture and slightly sweet braising liquid blend into a Kanto-style dark soup stock infused with bonito dashi; though dark in appearance, it is lauded as a broth you will want to drink down to the last drop. Different cuts of pork are featured one after another, including thick-cut simmered pork, thinly sliced chashu that blankets the bowl, and limited-edition tetchan pork offal, while wide, smooth kishimen noodles cling wonderfully to the rich broth. With standing counter space only, bowls are served within minutes of ordering. Regulars gather from the moment the doors open at 6:30, creating a lively atmosphere where staff and guests greet each other. The bright interior with its plain wood counter makes it easy for solo diners to drop in comfortably.
