Its signature dish, the special tsukemen, combines medium-thick noodles with sweetness and chewiness made from Hokkaido-grown Haruyoiwai wheat, paired with a thick, rich dipping sauce blending pork bone, chicken bone, and seafood. Guests are encouraged to first taste the noodles with just algae salt to appreciate their flavor. There's also the fun of choosing from black tsukemen fragrant with burnt garlic mayu oil, spicy tsukemen, and options of piping hot kamaage or chilled noodles. To finish, a soup made from the first extraction of bonito and mackerel dashi is served in a Nanbu ironware kettle to dilute the dipping sauce.
