Made with carefully selected native heirloom buckwheat seeds, the 100% buckwheat (ju-wari) soba showcases coarse-ground grain texture, rich natural sweetness, and firm bite; enjoying the first bite simply with salt is recommended. The luxurious 'tasting comparison' course is also popular, allowing guests to savor ju-wari, thick-cut ganko soba, and smooth-textured ni-hachi soba all at once.
