Situated just a short walk from the north exit of Asagaya Station, PURE CUT Asagayakitaguchiten is a specialty ramen shop where you can experience bowls bringing out the full flavor of oysters. The signature oyster salt ramen features mellow dashi (Japanese soup stock) simmered as if using whole oysters, blended with oyster paste to release a rich, deep umami reminiscent of ajillo across your palate. It pairs exceptionally well with large, moist rare chashu pork and rock seaweed, and using the leftover soup to make a cheese risotto-style dish is also popular. The shop offers original menu items such as a jet-black bowl infused with the richness of squid ink and soupless tantanmen, while a variety of tabletop condiments including garlic apple vinegar and budo sansho pepper let you enjoy shifting flavors. The clean 12-seat counter space is completely non-smoking, allowing anyone to casually savor a blissful bowl alone after work or on days off.
