Shibetsu Barbecue is a specialty lamb restaurant that purchases whole rare domestic Suffolk lamb and serves it grilled over charcoal mesh. Unlike cooking on a standard Jingisukan dome skillet, the wire mesh allows excess fat to drip away as the meat grills aromatically, bringing out the lamb's natural, clean savor and sweetness to the fullest. A variety of cuts is available—from tender, milky shoulder loin and sweet, flavorful rib kalbi to rich, lean leg meat—best enjoyed simply with herb salt.
