Made without sugar, the firm sushi rice (shari) uses only red vinegar and salt for a sharp acidity that robustly highlights the flavor of generously sized sushi toppings (neta). The selection features traditionally faithful sushi, including conger eel simmered so tenderly it melts in your mouth and served in two styles (sweet glaze and salt), thick simmered clams cooked to perfection, and neatly cured gizzard shad.
