Located within walking distance of Omori Station, YUI is a ramen shop where you can enjoy authentic bowls that push the appeal of niboshi (dried sardines) to the limit. The signature dish, "Jun-niboshi," uses no animal-based ingredients at all, extracting Dashi (Japanese soup stock) exclusively from dried sardines; despite its cement-like gray appearance, the bitterness is kept in check, allowing a mellow umami and deep richness to gently spread across the palate. Other must-try items include the ultra-thick "Nojun-niboshi," made by thoroughly simmering dried sardines, and the moist, tender low-temperature cooked chashu packed with condensed flavor. A variety of aedama (seasoned noodles) for changing flavors, such as clam butter, are also available, letting you savor the dish down to the very last drop. In a clean space with 10 seats in total, careful craftsmanship and speedy service ensure that even solo diners can casually enjoy a quality dining experience.
