The signature Style Miso features a mellow richness and sweetness created by layering miso over white broth; dissolving the minced meat miso changes the flavor profile entirely. Meanwhile, the Kansai Soy Sauce pairs a clear soup with fragrant yuzu, allowing the savory umami of seafood to gradually expand on the palate. Homemade noodles kneaded with whole wheat flour have a chewy elasticity, making seasonal limited noodles a delight to look forward to, including cold noodles enjoyed with chilled, firmly rinsed noodles in a crab dashi soup.
