Quietly located in a building basement in Nishi-Shinjuku, Sushi Kotobuki is a sushi restaurant celebrated for its creative nigiri that brings out the unique character of each ingredient, such as blackthroat seaperch seared with aromatic white soy sauce and horse mackerel accented with special condiments (yakumi). The sushi rice (shari) is seasoned with mild red vinegar, cooked slightly firm, and paired with varied seasonings like bamboo charcoal salt and powdered soy sauce to highlight the umami of each sushi topping (neta). Thoughtful touches abound throughout the course meal, including smoky iburigakko and sea grapes torotaku rolls that offer an enjoyable texture, as well as a rich soup made from meticulously strained fish bones. Inside, guests will find private rooms alongside a beautiful plain-wood counter that offers a close-up view of the chef's craftsmanship. Enfolded in the warm hospitality of the friendly head chef, diners can fully enjoy luxurious Edo-style sushi for anniversaries or dining gatherings.
