Widely regarded as the flagship of the Wakayama ramen Ide style, Chinese noodle specialty restaurant Ide Shoten is a long-established chuka soba shop that began as a food stall in 1953 and has continued for over 70 years. Its smooth broth, where pork bone and soy sauce blend together, is known for its refreshing finish and pairs well with thin straight noodles. Thinly sliced yet deeply flavorful moist chashu and flower-shaped kamaboko modeled after Kishu plums add color, and many guests choose the special chuka soba to enjoy generous helpings of chashu. Regulars often nibble on the tabletop hayasushi (pressed mackerel sushi) while waiting, as its gentle acidity serves as an appetizing prelude to the bowl. Though lines form even before opening, orders are taken while waiting, ensuring a smooth flow once seated. The seasoned interior is compact with 20 seats across counter and table seating, entirely non-smoking, and has parking available, making it easy to drop by during sightseeing or for a quick solo bowl.
