For its signature hitsumabushi, crisp and fragrant on the outside while tender and fluffy inside, generous portions of eel are served along with instructions on enjoying it through three distinct stages: as is, with Condiments (yakumi), and finished with Dashi (Japanese soup stock). The unagi don features generous layers of large eel, including a delightful hidden portion nestled within the rice, paired with an elegant clam clear soup to cleanse the palate. The limited liver unagi don and liver hitsumabushi, generously topped with plump eel livers, delight organ meat enthusiasts with their crunchy texture and deep richness.
