Founded by the late Minoru Sano, dubbed the 'Demon of Ramen', Shinasobaya Main Store has nurtured numerous master ramen craftsmen. Its flagship is a bowl of clear shoyu ramen, where despite its simple toppings, deep layers of umami harmonize quietly with fragrant thin wheat noodles. The transparent golden shio ramen highlights pure depth and savory taste without upfront saltiness, while the shoyu wonton ramen, featuring two thick slices of chashu and silky wontons, has long enjoyed devoted support. High-caliber toppings are equally prominent, including Nagoya Cochin seasoned egg, menma bamboo shoots retaining a crunchy texture near the stem, and Kinka pork chashu with subtly sweet fat. In summer, creative seasonal specials such as chilled noodles with peach make an appearance, complemented by the shop's meticulous choice of distinct bowls for shoyu and shio ramen.
