The specialty of Dotombori Imai is its kitsune udon, starring an amber dashi (Japanese soup stock) brewed from Hokkaido kelp, Kyushu mackerel flakes, and round herring flakes, paired with thick, sweet-simmered fried tofu and tender, chewy noodles. Upholding a dedication to never pre-making broth and instead brewing it fresh in small batches multiple times, the restaurant preserves the flavor of "Imai of the Dashi" that has continued since the postwar era.
