Chitose Main Store, founded in 1949, is a historic udon shop in Namba with a monument marking the birthplace of "nikusui" outside its door. Created simply by omitting the udon from meat udon, this dish features thinly sliced beef and a soft-boiled egg immersed in dashi (Japanese soup stock) blended from bonito and round herring, delivering a deeply savory flavor infused with the rich essence of beef while remaining light. It is traditionally eaten alongside raw egg over rice drizzled with dedicated dashi soy sauce, with some diners even topping the rice with beef to enjoy it gyudon-style. Meat udon with sweet-and-savory simmered beef and soft noodles is also served, alongside a pork udon exclusive to the main store.
