Menya Taisei is an Iekei ramen restaurant located a 1-minute walk from Nakano-sakaue Station. Its soup layers pork bones with three varieties of chicken carcass, including Awaodori, and finishes with a house-blended soy sauce sauce, earning praise for a profile that is rich yet crisp, light on the finish, and drinkable to the last drop. The Tokusen and Jo-Tokusen options come generously topped with nori seaweed, seasoned egg, and a luxurious selection of chashu prepared using different methods, including slow-cooked pork shoulder, charcoal-grilled pork, and chicken. A diverse lineup of tabletop seasonings, such as garlic, doubanjiang, specialized mayonnaise, and vinegar, allows guests to customize each bowl, and wrapping rice in soup-soaked nori is a popular way to finish the meal. Seasonal touches also stand out, such as switching to a citrus-infused tare in summer. The interior features just 14 counter seats encircling the kitchen, where energetic staff greet diners and check noodle firmness and flavor strength one by one. Despite constant queues, seat turnover is brisk. Fully non-smoking, it is also well-suited for solo lunches.
