An evening at Quintessence begins with a completely blank menu. Guided by the philosophy of a single omakase (chef's choice) course that fully uses the ingredients sourced that day, its goat milk bavarois—a signature dish since the restaurant opened—features a minimalist composition highlighting salt and olive oil to accent the contrast between the milk's sweetness and savory saltiness. Seasonal white fish such as alfonsino and longtooth grouper receive acclaim for their precise heat control, yielding crisp skin and a rare, tender center, while meringue ice cream sprayed with seawater from Noto leaves a memorable finish. As photography is not permitted in the main dining room, guests can quietly focus on each dish; photography is allowed in the two private rooms accommodating four and six guests. The explanations of the dishes and guidance on when to eat are meticulous, and many guests note being touched by the chef personally seeing them off at the entrance. While dinners are expensive, starting from the ¥30,000 range, praise consistently highlights the sheer perfection of the experience.
