afulo is a dried sardine (niboshi) specialty shop situated by the pond of Mitsugi Park, a short walk from Shimura-sakaue Station. Its signature chuka soba features a rich dried sardine broth layering umami, bitterness, and acidity, paired with snappy low-hydration thin noodles. The shop has also become famous for displaying the broth's dried sardine concentration level on a daily basis. The bowl includes thick, braised-pork-like chashu and rich yamabuki seasoned soft-boiled eggs with runny yolks, while the seasoned extra noodles (aedama) coated in soy sauce sauce and fragrant oil are so popular that almost every guest adds them to their order. Crisp, finely chopped onions provide a refreshing sweetness that cleanses the palate between rich bites. The interior consists of only 8 L-shaped counter seats, creating a distinct, focused tension as diners silently concentrate on their bowls. Welcoming patrons since 2011, the shop also provides peace of mind through a waiting-list system that manages queue times.
