Founded in 1933, Hangzhou Hangzhou Restaurant is recognized as the root of Tsubame back fat ramen, preserving to this day the bowl born from the craftsmanship culture of a factory town. The signature Chinese noodles combine extra-thick flat noodles that are chewed rather than slurped like udon, a broth of dried sardines and dark soy sauce topped with plenty of back fat, and fresh chopped onions, leaving many diners surprised by how much lighter it feels than its appearance suggests. Popular pairings include adding extra onions, ordering the chashumen topped with thick slices of roasted pork, or enjoying the large, crisply fried gyoza. The staff's efficiency in memorizing orders without order slips and serving dishes smoothly is impressive, and their friendly service helps ease the wait in line. With 80 seats, tatami seating (zashiki) — Low tables on tatami mats. Shoes are removed. in the back, and parking for 50 cars, it is a reassuring stop for ramen tours by car from outside the prefecture.
