Its signature dish is a paella made with dashi drawn from seafood that changes daily, such as swimming crab or hamaguri clams, and it's known for the fragrant socarrat that forms on the bottom of the pan. The fideua, which uses thin pasta in place of rice, has a two-layered texture that is crispy and chewy, soaked in rich shrimp dashi, and it's pleasant to vary the flavor with aioli sauce or lemon.
