Located in an alleyway in Motomachi, Kobe, just off the main street of Nankinmachi, Gyoza Daigaku is a gyoza specialty restaurant founded in 1974. The signature dish is small-sized gyoza pan-fried crisp and fragrant in thin skins; because the filling is light and packed with cabbage, you can easily finish plate after plate. The secret to the flavor is the table miso sauce: mixing your own miso, chili oil, vinegar, and soy sauce according to the recipe posted on the wall, layering heat over the sesame-flavored miso, is a unique ritual here. Resembling a Showa-era public eatery, the interior has just 18 non-smoking seats lining an L-shaped counter and small tables. Although queues form before opening, turnover is known to be quick. Orders require a minimum of two servings per person and no additional orders are allowed, so deciding everything upfront is the house rule. A set meal (teishoku) with rice and egg soup is also available, making it an ideal first stop to quickly enjoy gyoza and beer in the ¥1,000 range.
