Located in Building A of Karuizawa Harunire Terrace, SAWAMURA is dedicated to bringing out the umami of wheat through long, low-temperature fermentation using dozens of flour varieties and multiple homemade yeasts. Crisp on the outside and chewy on the inside, the freshly baked breads are renowned for the natural sweetness of wheat and fermentation aroma, with many guests purchasing them for takeout. Beautifully layered croissants and caramelized kouign-amann are also highly acclaimed, supported by Karuizawa's hard water, which is said to lend a flavor close to that of Europe. The restaurant offers dishes such as roasted chicken thigh paired with Shinshu mushrooms and coarse-ground beef burgers.
